    What You’ll Need: 4 Ripe Tomatoes  Salt to Taste Garlic Salt to Taste Ready to go Pie Crust  1/4 Cup Chopped Fresh Basil 2 Cups Shredded Mozzarella Cheese 1/4 Cup Grated Parmesan 1/2 Cup Sour Cream Pepper to Taste  1 Tablespoon Hot Sauce (we used Louisiana) What You’ll D0: Preheat oven to 350 degrees Lay out pie crust in a greased 9″ pie pan Slice tomatoes 1/4 inch thick Pat tomatoes dry with napkins or paper towels Sprinkle garlic salt over tomatoes Flip over, pat dry other side and add salt (The salt will also help dry out the tomatoes!)     This recipe is a family classic on my dad’s side. Every time we would visit my Poppa and Nonna growing up they would have this chicken spaghetti cooking. Nothing like the smell of chicken spaghetti on the stovetop! Here’s my (slightly different) take on my Poppa’s classic.     Tamale Pie

    What you need: 1lb ground beef cooked and seasoned with taco seasoning 1 can corn 1 can black beans 1 can petite tomatoes 1 cup cheese cornbread What You’ll Do: Cook ground beef, drain and season with taco seasoning. Basically just like you would if you were making tacos. Then place ground beef in a sprayed 12″ cast iron skillet. Next drain your beans, corn and tomatoes and add them on top of the ground beef. Add 1.5 cups of grated cheddar cheese next. Next mis a batch of cornbread following the instructions on the cornbread packaging. Pour the cornbread mixture on top of the layers and bake! Bake the…

    Easy Lemon Pie

    Who doesn’t love a sweet lemon pie? Right?? That creamy tart goodness is so yummy!  My sister and her family were coming over and I wanted to serve a dessert without spending too much time prepping! So I through together this easy lemon pie. No baking! It was a hit for sure!  All You Need: 2 blocks cream cheese (room temperature)  8oz Cool Whip  3.4oz instant lemon pudding mix  1 table spoon of vanilla  1  graham cracker crust Lemon Zest (for garnishing) What You’ll Do: In a mixer, blend cream cheese, cool whip, lemon pudding mix, and vanilla.     Let me start by saying this is a recipe my mom made ever Christmas Eve of the Eve. I have WONDERFUL memories of growing up being at home eating these the week of Christmas. With that being said, my mom doesn’t measure ingredients when she cooks. She simply throws it all together and it always turns out amazing! So I’m going to give the measurements I use.     Eggnog Punch

    I recently made this super yummy eggnog punch for a family gathering and shared a timelapse of it on my IG. Since everyone ended up wanting the recipe, I’m sharing it below! What you’ll need: 2-liters of ginger ale chilled 1 carton of eggnog 8 scoops of vanilla ice cream gold sprinkles (optional but festive!) Instructions: Add all ingredients together in a large bowl. I used a glass bowl because I think the colors of the beverage are pretty! Then, top it with gold sprinkles (you can use any sprinkles you already have). Serve and enjoy!
