Dinner in a Pumpkin is quickly becoming an October tradition for our family. I love little traditions like this because they make the season feel extra special.
This is such an easy recipe and beautiful to serve. If you’re hosting a carving party, this can also feed quite a few! (Around 6 with these measurements but you could easily double to feed more!) Another tip – this would be fabulous smoked on a grill! Here’s the recipe!!
What You’ll Need:
1lb Ground Italian Sausage 2 4.3oz Boxes of Long Grain & Wild Rice Rice a Roni 1 Cup of Sliced Carrots 2 Sliced Bell Peppers, We Used Red & Orange 2 Cloves of Diced Garlic Onion Powder Salt & Pepper Medium Pumpkin
What You’ll Do:
1. Cook rice following instructions on the box and while it cooks; 2. Cut off top of pumpkin and clean out the strings and seeds. Season inside with salt & pepper 3. Put the pumpkin in the oven at 350 on a large baking sheet to start cooking while getting the rest ready 4. Brown the sausage in a large pot 5. Add a little olive oil to sausage in pot if it’s too dry, then add carrots, bell peppers, garlic, and season with onion powder. Sauté until vegetables are soft, 6-7 minutes 6. Add rice to mixture and mix well 7. Add the mixture into the pumpkin and return to oven, let bake until the inside of the pumpkin is nice and tender, about 30-40 minutes 8. Serve, scraping some pumpkin from the sides, and enjoy!
We leave to place the pumpkin on a beautiful tray in the center of the table. Feels very festive!! Hope you enjoy!
